Healthy 1 Minute Blueberry Muffin

I always read different blogs to find some new recipes. That’s because I like to try something new. It concerns not only to food. Every time my children and I spend my free time walking to new places in our city. When my husband goes to vocation we turn on our tablets and we’re looking for some pretty places where we can pass one-two weeks together. I prefer the countryside and calm towns near the sea. I’m fed up with public beaches and crowded places. I can’t feel comfortable around a lot of people…


The main hobby of me is cooking, especially finding new recipes and sharing them with you. It is no secret that I look for them at different cooking sites, reading blogs or watching some cooking shows.

Yesterday, surfing the net and being fed up with bad weather I decided to bake some dessert. I scrolled through my subscriptions and faced to the recipe of this young boy. It was a few shocked for me. I rarely saw boys who liked the kitchen and blogged. I was interested and I started to read his recipe. It was a really good recipe and so healthy and fast. I saw in this simple recipe the decision of the morning problem of breakfast for my family. It is light and delicious muffins.


If you want to prepare this dessert, you need: some coconut flour, almond flour, oat flour, granulated sweeter of choice, baking powder, pinch cinnamon, egg, mashed banana or pumpkin or mashed starch, dairy-free milk, frozen blueberries.

All ingredients must be mixed together. Then fold in the blueberries and ensure there a few remaining at the top. Microwave for 1 minute.
