Strawberry Coffee Cake Muffins

Hi, my dears! I was so happy because of the coming of spring. This nice beautiful season of the year seems like the wonder. I can wear brighter closes and go out without a coat. It’s amazing!
I felt so inspired by spring, that I decided to prepare some special light dessert. I know, I like crazy ideas and some unforgettable recipes for my lovely husband and daughters, but yesterday I wanted to avoid these ideas. I wanted strawberries! I mean Strawberry Coffee Cake Muffins.

The main advantage of this dish is a fast total time of preparing ingredients for this dish and time for cooking. Actually, I want to start this recipe writing some advice for preparing. Especially, I want to notice that muffins are very good to take them out. My daughters took them out to school. They are so cute and little like my lovely suns.

So, if you want to prepare these amazing muffins, you need to divide your recipe into two parts: preparing of crumble and muffins.
For muffins, you need butter, granulated sugar, large egg, vanilla extract, all-purpose flour, baking powder, salt, buttermilk, fresh strawberries, diced small.
For the crumble: cold butter, diced small, all-purpose flour, light brown sugar, granulated sugar.

Preheat your over to 375 F/ During this time beat butter and sugar, add vanilla and don’t stop the beat. Combine all dry ingredients in a separate bowl, then add buttermilk and flour mix, add strawberries and about 1/4 cup of batter to each muffin liner. In another bowl, beat crumble ingredients until it looks like a crumble. Sprinkle it on the top of each muffin. Reducing the temperature of the over to 350 F and bake muffins for 18-20 minutes. Decorate this dessert with strawberries and some cream or chocolate.
