Tropical Coconut Pie

Yesterday I had some party. My sister had a birthday, so my husband and I visited her. She lives in the near town. Few days before she got through and invited us to her house. She is my older sister. We were very close when we lived together, but know we are married and have children. It is so difficult to keep in contact with her, but we try. We always call each other and exchange with the news. Sometimes we guest each other, our children like to pass time together, so we want to save our relationship. Because of the business, she is tied up all the time, so we see one another rarely than we would like. But we are so happy with every welcome and use every opportunity to meet.

So, yesterday we passed all day into her house. Actually, we pass a few days with her, but yesterday she had a party, where her friends were invited. We joked and told about life. I told about my blogs and my love to cook some desserts. Women were interested in my recipes and advise. They promised to visit my site and read all the recipes.

So, special for them and for all people who like sweets and delicious cakes, I want to share with you some new recipes for coconut pie. It is the yummiest thing I’ve ever tasted! So light and tender, this cake has creamy filling and is easy to prepare.

You don’t need a lot of ingredients and professional skills. You need only desire and 45 minutes of free time. Except it doesn’t forget to look into the frig to find: Shortcrust pastry or a cooked pie crust.

For the filling you need Cream Cheese, Whipping Cream half of this amount is also for the topping & 3 Teaspoons powdered sugar, chopped pineapple, Some toasted or untoasted coconut for the topping.

And for the custard prepare Sugar, Tablespoons Cornstarch, Pinch of salt, Coconut Milk, Egg Yolks,  Teaspoons Vanilla Extract.

Decorate this cake with some nuts and coconut. And have a nice meal!
